The Danish National Food Institute (DTU Food) invites applications for a one-year postdoc position within the research group of Food Microbiology and Hygiene. The group develops and applies methods for the rapid detection, typing, quantification and prediction of microorganisms and microbial responses in food and water. We develop predictive food microbiology models by using our detailed characterization of food in combination with microbial kinetics. New mathematical models and software are developed to improve development, processing, distribution, risk assessment and HACCP-based own control programs for various foods. Our research group consists of nine faculty/scientists, 13 PhD students/postdocs and has substantial experience within predictive food microbiology (see fssp.food.dtu.dk).
The industry and authorities increasingly use our predictive food microbiology models in product development/formulation and in documentation of food safety to reduce time-to-market and costs of microbiological testing. To be used in this way extensive and validated mathematical models including the effect of various product characteristics and storage conditions are required. This postdoc project will focus on development of new predictive models for Listeria monocytogenes in selected veined and nisin-containing cheeses.
As the postdoc, you will study growth responses of Listeria monocytogenes and develop mathematical models to reliably predict growth and no-growth conditions for this important pathogenic microorganism. Focus will be on the anti-listerial effect of nisin and on the effect of contamination scenarios for growth responses. The project includes collaboration between DTU Food and a Danish dairy company.
- You will quantify and mathematically model the inhibitory effect of nisin and dairy specific ingredients in cheeses on growth and survival of Listeria monocytogenes.
- Your research will include quantitative determination of nisin in cheeses and development of a predictive tool to facilitate the application of the developed models by industry and others.
Candidates should have a PhD degree in predictive food microbiology, food microbiology, or equivalent field.
We are looking for a candidate with experience in food microbiology and with the ability to perform experimental studies of microbial kinetics in food. Interest in fundamental and applied aspects of microbial food safety and experience with quantitative microbial ecology or predictive modelling is needed. Good communication skills and the ability to work as part of a team are required.
